We run our proxies with 5 * 9Gb of cache disks (5 cache boxes). The memory
image of squid grows to about 750MB (with a full cache). Although this
slowly grows over time (~1mb/hour) as squid continues to run.
Our average abject size in the cache is 9.8K.

You could probably get away with 512M (I am). Depends on your hits/hour
and client bandwidth of course.
