Thanks for the reply. As far as my basic (read very basic!) shell script
knowledge goes the squid executable is /usr/local/squid/bin/squid and that
is where the shell script is looking.

Check the squid script in init.d. It would appear that the full path to
the squid executable is not correct, because the script can't find it.
